Our meat and cold cuts come from Macelleria Falaschi in San Miniato, which has been named among the world’s 50 best pork butchers. For over 100 years, this historic store has been working with local businesses, selecting and following the pigs through their life cycle at first hand and ensuring the animals are well looked after and given only natural feed.

Mieleria Rossi Novaro

Our jams and honeys are supplied by Mieleria Rossi Novaro, who use artisanal methods to produce their delectable honey.

With a philosophy based on quality, not quantity, they use select types of bees which yield less but the honey is of another level. When it comes to their organic jams and marmalades, they follow a traditional grandmother’s recipe using 100% fruit.

Tenuta Guardamare e Tenuta Biliotto

Our Tenuta Guardamare farm provides us with a range of zero-kilometre produce including vegetables, flour, Gin-eprò, and Marittimo wine and grappa

What fruit and vegetables don’t come from our own holdings are supplied by a trio of local businesses. The Pasquini e Ridulfo organic agricultural company, Mangoni Ilaria and Orto Barbadoro in San Vincenzo provide the fresh, zero-kilometre produce our guests enjoy in our restaurant every day.

Tenuta San Carlo

We use Olga organic rice, produced by Tenuta San Carlo in the Maremma National Park,
where it is cultivated naturally, using methods that respect the environment, without the use of any form of pesticides. Its exceptional quality is due to a number of factors, including the use of stone milling techniques to process it.
